Hi every one let me introduce my self first I am Onkar samarth born and bot up in Mumbai by profession I am chef at corinthia hotel London. As I have worked with different types of restaurant in London and USA I wanted to shire my food experience with every one.


when I was student in London as my par time job I was working with one Japanese restaurant.


Sushi is the most famous Japanese dish outside of Japan, and one of the most popular dishes among the Japanese themselves who usually enjoy sushi on special occasions.


Sushi is a Japanese specialty based on boiled rice flavored with a sweetened rice vinegar, a mixture called sushi meshi. Once cooled, the rice has a glossy sheen and separates easily. There is a wide variety of sushi including nigiri sushi (thin slices of raw fish seasoned with wasabi- a fiery, green condiment based on Japanese horseradish; and wrapped around or layered with this rice), hosomaki (thin sushi rolls) and futomaki (thick sushi rolls). To make these rolls, various chopped vegetables, raw fish, pickles, tofu, etc. are enclosed in sushi rice and wrapped in thin sheets of nori (seaweed). The rolls are then cut into slices. Sushi are designed to be finger food and can be served as appetizers, snacks or a full meal. Soy sauce is often served with sushi for dipping


Sushi-ya


Sushi-ya are restaurants which specialize in sushi. In most sushi-ya, customers can sit either at a normal table or at a counter (sushi bar), behind which the sushi chef is working. Kaiten-zushi


Kaiten-zushi are sushi restaurants, where the sushi dishes are presented to the customers on a conveyor belt. Customers can then freely pick the dishes that they like or order dishes which are not available on the belt. In the end, the number of plates is counted to determine the cost. There are usually a few kinds of plates (differing in color or pattern), each being associated with a certain price. Kaiten-zushi tend to be less expensive than usual sushi-ya.


There are many different types of sushi. Some popular ones are:


Nigiri


Small rice balls with fish, etc. on top. There are countless varieties of nigirizushi, some of the most common ones being tuna, shrimp, eel, squid, octopus and fried egg.


Gunkan


Small cups made of sushi rice and dried seaweed filled with seafood, etc. There are countless varieties of gunkanzushi, some of the most common ones being sea urchin and various kinds of fish eggs.


Norimaki


Sushi rice and seafood, etc. rolled in dried seaweed sheets. There are countless varieties of sushi rolls differing in ingredients and thickness. Sushi rolls prepared "inside out" are very popular outside of Japan, but rarely found in Japan.


Temaki


Temakizushi (literally: hand rolls) are cones made of nori seaweed and filled with sushi rice, seafood and vegetables.


Oshizushi


Oshizushi is pressed sushi, in which the fish is pressed onto the sushi rice in a wooden box. The picture shows trout oshizushi in form of a popular ekiben (train station lunch box).


Inari


Inarizushi is a simple and inexpensive type of sushi, in which sushi rice is filled into aburaage (deep fried tofu) bags.


Chirashi


Chirashizushi is a dish in which seafood, mushroom and vegetables are spread over sushi rice.


Note that "sushi" becomes "zushi" in word combinations in which "sushi" is the second word, e.g. nigirizushi.
