Pav Bhaji-Serve & Nerve of millions

Imagine a buttery, crispy Buns(Popularly known as PAV) shallow fried in Butter(Preferably AMUL butter, which is little salty), meshed vegetables cooked on TAWA(flat Pan) with excellent flavoring agents??


Feeling Hungry? Run away from your computer screens and catch and hawker on nearby street..hmmmm.. choosy about Hygiene? Go to some decent restaurant for this exotic dish !!


This is none other than ?PAVBHAJI?


Pav Bhaji- Crude meaning is Bread and Vegetables. It doesn’t sound all too exciting when you put it this way. I have seen many people who relish it off the hawkers, dhabas, restaurants, starred hotels have their taste-buds in the right place.


Pav Bhaji is the quintessential street food.


It is a fast-food, but it takes quite some time to prepare. It can be eaten on the run and yet is sometimes served in restaurants. Somebody have rightly said, it is a half-meal which grabs you by the gullet and fills the belly without emptying your pocket. Never make this dish for just you or one other person. A pav bhaji session is for a group!! More the people, more will be the enjoyment!!


But remember, these people must have a good appetite and must eat pav bhaji the way it is to be eaten - lots of bhaji with every mouthful !Not with the Spoon and Fork !!That is why I said, it is a street food?and not for the faint hearted with ?Ye na Cholabe? types?


I take this opportunity on MS to write review on this unique dish, very famous in India, comparatively in Maharashtra.


I will define Pav bhaji as ?A blend of vegetables mashed with thoughtful ingredients of Garam Masala and Butter and Pav(Variety of Bread like burger buns, but rectangular & smaller in size).Let people say anything, but Pavbhaji is popular after VADAPAV in Maharashtra.


I like it very much(Yesterday, I had it in TONS?. ?)Thogh, it takes some time to prepare, it is very easy and can be made by very novice cook with little help.(This is a bold statement but I feel it is very true..)


Lots of permutations and combinations are possible for change in its taste though the basic funda remains the same?This makes PAVBHAJI one of the best food with all classes and masses of India.

Ingredients:




  1. Onions - 3




  2. Potatoes - 4




  3. Chopped Cauliflower - half cup




  4. Green Capsicum- 3




  5. Tomato paste or Fresh tomatoes - 2




  6. Pav Bhaji Masala (As per taste.....)




  7. Ginger-garlic paste - 3 tsp




  8. Red Chilli Powder - as per taste




  9. Salt - as per taste




  10. Vegetable Oil - 2 tbsp




  11. Jeera Powder(I add it for additional flavor)




  12. Cumin seeds - 1 tsp




  13. Chopped Coriander leaves




  14. Lemon Juice - 1 tsp




  15. Butter (Depending on your Dieticians advice, I recommend atleast 200 Gms for 4 people)






PREPARATION METHOD


1) Peel the potato skin, and chop the potatoes, cauliflower, and green capsicum. Pressure cook them with salt till it gets cooked (about 8 min).


2) After it gets cooked, drain the water and mash the vegetables so that it becomes a fine paste. Keep it aside.


? You can also keep it little coarse if you don?t want it very fine.You will find it as ?KHADA PAVBHAJI? in menucards of hotel.


? For Jain Bandhus on MS?Do not use Onions and Garlic at all but add one green capsicum to compensate..(Personally, I do not like it without Onions but..Apna Apna Choice hai...)


That is why I call it food with personal touch?. //hahaha


3) Take a non-stick pan or Kadhai and add vegetable oil, cumin seeds, let them sputter, Add onions and fry it till it becomes translucent, Add Pav-bhaji masala powder, garlic-ginger paste, salt, red chilly powder and then add tomato paste or finely chopped tomatoes. Let them cook for 5 min.(I am hungry..Take a break?.)


BREAK KE BAAD:


4) Add the mashed vegetable paste into the onion-tomato paste and mix them well. Add butter and lemon juice and garnish with corainder leaves.


5) Take the pav(Burger buns), Cut them in between, slightly toast them with butter in a tava IN and OUTS.
