Chicken is versatile, relatively cheap and comes in a variety of cuts. Chicken is easy to cook with because its mild flavor doesnt compete with other ingredients.
We get three types of Chicken in India normally.
FRESHLY CUT
FRESH-CHILLED
FROZEN CHICKEN
If using a fresh-chilled chicken, it can be cooked straight away. Both fresh-chilled birds and frozen chickens are washed, but the weight of a frozen bird will include water from the washing process. If a chicken is hung for 24 hours before being chilled or frozen, the flavor increases.
Frozen birds need thawing, which should be done as slowly as possible in the fridge or in cold water, refreshing it often. When buying frozen chicken, look out for ice between the wrapper and the skin which shows that its been thawed and refrozen.

Can be used as whole, strips or cubes for stir-fries and kebabs. If you plan to remove the skin before cooking, the meat may dry out if its roasted or grilled without fat. So, take care while grilling or roasting.
- Chicken legs

Chicken legs are dark meat and can be much more fatty than BR portions. Often sold as drumsticks, with the bone left in the centrene drawback is that the bone increases the joint weight, so there will be less meat per kilo than with BRs. Drumsticks are ideal for roasting or deep frying , can be stuffed or marinated to provide a good taste.
- Chicken wings

Chicken wings have dark meat, similar to legs. They?re quite fatty and contain a large amount of bone and inedible material per kilo.
Ideal for deep-frying or barbecuing or for Chinese dishes which we get everywhere at roadside now a days.

I have tried my all recipes with Chicken which we get from any Chicken shop which is Freshly cut, Frozen Chicken and Chilled Chicken.
Now, Fresh Chicken is always Preferred provided that it is clean, from trustworthy source(Are baba woh bird flu ke baad to mera chicken khana adha ho gaya tha?..)
2nd thing I hate the wooden particles which get stuck to chicken when Butcher cuts the chicken pieces on his Woody plank.
Frozen chicken is strictly NO-NO as it requires hammer and nail..(As I don?t have patience to wait till it gets thawed)
So, one day Mr.Gentlemen went to a Supermarket and got apack of Godrej Real Good Chicken.I got a brochure with it stating following points which I will discuss one by one as per my personal experience.

--Hmmmm..this I don?t know.I have never asked any CHICK of her age but one thing is sure meat is pretty tender and juicy. You get more meat per Kilo.
- It is more healthy, since at 6 week age, chicken has less fat content than older chicken
For Fatty people?..Kya bolta tu??Dieting karne ke liye mast hai na?
- Better farm management practices ensure that it is hygienic and safe to eat.
