Named for a city in Afghanistan, this winning Oberoi eatery has cream-colored walls and pillars, a show kitchen, and stunning 19th-century Afghan etchings and handsome ethnic clothing mounted on the walls. The chef’s has an emphasis on low-fat preparation and a line of wonderful kadhai (Indian wok) options. In dishes like karara paneer aur khilley phool, fresh ingredients such as broccoli florets and farmer’s cheese are quickly stir-fried with Indian ingredients like chili batter, pepper, and fresh mint to create a spicy curry. Other standards like dal makhani khandahari are stripped of their excess fat, leaving only flavor and aroma. Ghazals (Urdu songs) are performed every night except Tuesday by noted TV personality Ansar Sabri.
