Let me say this again, though I must have said this many times in many past reviews .use only filtered, first press oils not refined oils .be it of any brand .
Why is refined oil so bad really?
Let me explain .oils go rancid or toxic when exposed to air, light and heat and even a photon of light is enough to start damaging the oil.
Do you ever find olive oil stored in dark green bottles? Its to protect it from light .Why do you think is extra virgin cold pressed olive oil advocated so much? First its not refined and its from the first cold press of olives .
Now Tez is a premium Brand of mustard oil . Also as a rule of thumb oils should be the color of the stuff it came from .so if it came from mustard it should be very dark mustard color which it is .its very viscous and very strong .hence the name Tez . Its cold pressed and does not undergo any refining process which can be so damaging .
why in the world is refining so damaging?
Refining of oils is best for the manufacturer.they heat the oil seeds at very high temperatures and hot extract the oil with the help of something like hexane, which is a petroleum product . Hot extraction means more oils produced, cold extraction means lesser oil generated from the seed / fruit
Such extreme heat beyond the smoking point of the oil damages and breaks the fatty acid bonds and the oil turns toxic then and there .
Next the addition of solvent for oil pull is also an evil process, yes evil as later its also evaporated using excess heat . Further damage occurs .
The resulting oil is bleached and deodorized, some chemicals are used in doing this by this time the oil is in a very bad state .
and we thought refining is the same as purifying, did we not? be honest?
Infact its a very very harsh process where heat and chemicals damage the oils badly .
The resulting oils that you get at home is very-2 toxic unless its kolhu ka tel or filtered and cold pressed as first virgin press squeezed oil.
Can sundrop, saffola or anyone who makes refined oils confront me on this front?
The brand Tez of mustard oil is expensive . Its bound to be, its the real thing, its pure, it may be strong and bring tears to your eyes while cooking, but thats because it pure, its color and aroma is very strong but thats how oils are supposed to be .
Not a single person will like the very strong taste and aroma .but then thats how real oils are, they lend a very strong color, aroma and flavour that you may not like, but thats purity for you .
Also you will discover that you need very little oil to cook your food, almost half, thats because its real fat which is needed very little of for the same result .
I use the following oils/ fats in my kitchen always
home made desi ghee.
KLF coconad coconut oil
extra virgin olive oil generally borges .
Tez Mustard oil - filtered and cold pressed, Kachi ghani oil.
Butter to cook, contrary to general belief its many folds better than refined oils. Brand used Amul or the butter is made at Home .
No one eats using refined oils at home . Its not for the sake of the review that I mention this, if anyone from my local area wishes to come home and learn about fats, call me, message me and have a small meal with me .

Now here is an easy question for everyone - why are nuts and seeds considered a great source of fats?
easy.they cant be subject to air, heat or light, so eating olives, cashews, almonds, walnuts etc or using chia or flax seed in your smoothies an excellent way to use good fats in your life.
There is no rocket science in understanding why single ingredient foods are the best then .
Also when you eat nuts and seeds the protein & fiber will stop you from over-consuming .
That reminds me I need to eat some kashmiri walnuts that I bought off ebay. Bye-2!
