Stuffed Chicken Breast
Ingredients:-
Chicken breast fillet
Basil + Salt, Black pepper
Spinach
Semi-dried Tomato
Fetta cheese
Veg oil and olive oil or butter
Mash potato
Seasonal Greens- Broccoli / Beans / Snow peas
Tomato sugo
Preparation method:-
Preheat oven to 210 degrees C.
Take the chicken breast and insert filleting knife from top-side to bottom.
Stuff with raw spinach, semi-dried tomato and fetta, Skewer if needed.
Season with salt, pepper and basil.
Heat oil in a pan, when hot, put chicken breast and brown it from both side, finish in the oven for about 14 minutes.
Meanwhile sauté greens vegetables in olive oil or butter.
Once chicken is ready, remove skewer, serve on bed of mash potatoes and tomato sugo with side of sautéed greens.
Note:-Tomato Sugo is a sauce made with mir-poix (carrots, celery and onions) + Blended tomato + Basil + Vinegar + Red wine + seasoning.
