A Baileys recipe

I think everyone has said enuff about Baileys, and it cannot be denied that it is easily the best thing that has come out of Ireland. My room-mate, Jessica, insisted that I share with everyone her grandmother’s recipe. So here it is, Bailey’s Irish Cream Cake.


Ingredients


(For 1 serving)


18 1/4 oz Pkg. yellow cake mix. (I guess any brand should do, here in Brisbane, Jess uses Brown and Polson)


4 oz Instant chocolate pudding( again, readymade, Like Sara Lee or best is if you make it. More effort, but better result)


3/4 cup Oil


1/8 cup Water


1/4 cup Vodka (Jess says Absolut is better than Smirnoff)


1 cup Bailey’s Irish Cream


4 Eggs


Instructions:


Combine cake mix, pudding mix, oil, water, vodka, Bailey’s and eggs in bowl. Beat until smooth. Pour into greased and floured pan. Bake at 350~F 40 to 50 minutes or until done. Remove from pan and cool completely. Mix a glaze of Bailey’s and powdered sugar to a thick consistency and drizzle over cake.
