In palada prathaman pieces of flour paste (ada) are boiled in milk and sweetened with sugar. No ghee or spices are added except some cardamoms.


The traditional method of preparing it is very laborious one. The ?ADA? which tastes amazingly undergoes painstaking process involving:


a) Grinding the par boiled rice well into a semi-thick batter.


b) Pouring this batter evenly in a thin layer on clean plantain leaf pieces.


c) Once the leaf pieces are tightly rolled, they are steamed (similar to idlis).


d) Then the steamed batter is removed from the leaf and cut into pieces.


Phew!!! Its very time consuming and no one really has this amount of patience to churn this stuff out.
