Sweet and salty flavors collide in these easy Potato Chip Clusters. Butterscotch chips hold together a delicious mix of potato chip pieces, peanuts, and dried cranberries.
This recipe is very flexible, so you can use try substituting peanut butter or white chocolate chips, or using other types of dried fruit or nuts.
INGREDIENTS
1 cup( 5.25 oz) salted peanuts
2 cups( 3.5 oz) potato chips
11 oz butterscotch chips
2 tsp coconut or vegetable oil
1/2 cup dried cranberries

PREPARATION
Prepare a baking sheet by lining it with waxed paper or parchment, and set aside for now.
Coarsely chop the peanuts and potato chips until theyre in small pieces.
Place the butterscotch chips and oil in a large microwave-safe bowl and microwave in 40-second increments until melted, stirring after every 40 seconds to prevent overheating.
Once the butterscotch chips are melted and smooth, stir in the crushed potato chips and peanuts, and the dried cranberries.
