Deteriorating Quality

This review is with regard to Nandini Pasteurized Toned Milk.

My family and I started buying Nandini Pasteurized Toned Milk(that comes in a half litre and one litre tetra pack), upon moving to Bangalore. In Chennai, we used to rely on Aavin, for our milk supply.

It was from around the second week of March, this year(the time when Bangalore’s temperatures spiraled out of control, thereby leading to a heatwave) that we began noticing a steady decline in the quality of milk, received from our local milk man, who unfortunately, insists on supplying only Nandini milk and not Aavin milk!

As a consumer, I am totally clueless as to what is causing the milk to be so mediocre in quality(in terms of taste and the annoying problem of premature curdling!). Could it be an issue with storage or something else? I can tell you that this is pretty frustrating.

Almost every day, it was the same old story at my household. The milk was found to have a mild chemical taste and by evening, while having tea to drink, one could actually, detect a pretty sour and curdled taste, with chunky curdled and creamy bits floating around in the milk storage container, much to my mom’s dismay!

The situation became so bad last week, that the milk curdled instantly while being heated, early in the morning and we unfortunately had no choice but to turn it into paneer!

Fed up with the declining quality and wastage, my mom devised a very useful method, last week, to prevent the milk from tasting unusually sour and hence, mitigate the problem of premature curdling.

Each morning, all the newly arrived milk, is carefully heated to boiling point. A portion of it, is used to make tea, coffee and other morning staples, while the rest of the newly arrived milk(in its boiled state), is quickly stored away in the refrigerator. This method has essentially, prevented the milk from curdling and my family has since, avoided a lot of unnecessary wastage!

Bottom line: Always remember to boil the newly arrived milk(irrespective of whether or not you are using it that morning), first, before storing it in the refrigerator in order to avoid the kinds of problems that my family and I have faced, recently.
